(2019)近日有報道顯示,華人海外賣松花蛋被查。報道顯示,位于意大利西西里島卡塔尼亞省Misterbianco的一家華人店鋪,警方總共查扣了800顆蛋,里面除了松花蛋,還有咸鴨蛋。警方說,雖然這些松花蛋在中國是特色食品,但是在意大利是被禁止的,而且來源不明,兩名華人也被通報給衛生機構處置。

松花蛋也稱皮蛋,其英文為century eggs(世紀蛋)或preserved eggs,應該來自于松花蛋超長的保質時期。
Century eggs, also known as preserved egg, hundred-year egg, thousand-year egg, thousand-year-old egg, millennium egg, skin egg and black egg, are a Chinese preserved food product and delicacy made by preserving duck, chicken or quail eggs in a mixture of clay, ash, salt, quicklime(生石灰), and rice hulls(稻殼) for several weeks to several months, depending on the method of processing.
Through the process, the yolk(蛋黃) becomes a dark green to grey color, with a creamy consistency and strong flavor due to the hydrogen sulfide(硫化氫) and ammonia(氨氣) present, while the white(蛋白) becomes a dark brown, translucent jelly(半透明果凍狀) with a salty flavor. The transforming agent in the century egg is an alkaline(堿性的) salt, which gradually raises the pH of the egg to around 9–12, during the curing process(腌制過程). This chemical process breaks down some of the complex, flavorless proteins(蛋白質) and fats(脂肪), which produces a variety of smaller flavorful compounds(化合物).
Some eggs have patterns near the surface of the egg white that are likened to pine branches, and that gives rise to one of its Chinese names, the pine-patterned egg.
